The problem of labor shortages is always at the heart of restaurant owners’ concerns. For some, they are forced to have students work in the kitchen.
The crowds in restaurants are increasingly important at the beginning of the summer season. However, restaurateurs are faced with a problem: they lack manpower. Some seasonal workers are just beginners in this demanding profession. “I am studying International Languages in Lyon. I am really the opposite of the restoration”reveals Louise. Despite her lack of experience, she was hired very quickly.
In this restaurant in Calvados, seasonal workers have had express training to learn the trade. “We are used to taking students, but students in apprenticeship”indicates the owner of the restaurant. This is the solution found to overcome the lack of manpower in this restaurant. Others have made a difficult choice because they don’t have enough people to work. “We are going to close one day during the high season, that is to say that we are going to close on Tuesday (…) and by obligation”deplores the director of another establishment.
