Seemore Sausage Founder Cara Nicoletti’s Unique Approach to Food


Whoever said you don’t want to know how sausage is made has clearly never met Cara Nicoletti. The fourth-generation Italian-Jewish butcher (and self-proclaimed mashed potato lover) has nothing to hide. In fact, she wants more people to know the insides of the food industry. That’s part of why she started Seemore Meats & Veggies, named after her grandfather, retired butcher Seymour Salett.

She calls her loved ones a “food family” – a family that passes on stories, memories and resilience by preparing meats, sharing recipes, cooking together and of course eating. It’s this sentimental connection to food along with her intricate understanding of animal agriculture that makes Nicoletti so passionate about making sausages that are totally unique, certified humanely raised, meaty, flavorful and stuffed with vegetables.

While traditional sausages contain around 98% meat and 2% pulses and spices, Seemore products contain around 70% meat and up to 35% fresh vegetables and herbs. By training and working as a butcher, Nicoletti realized that with perfect proportions, she could create quality, appetizing meat products with a high percentage of product.

“We started with sausages, but the goal is really to put a mixed product in every area of ​​the meat aisle where you would find a [full] meat product,” Nicoletti said.

Below, Nicoletti highlights some of Seemore’s most unique offerings. Although available at Whole Foods, Target, Sprouts and specialty grocers across the country, they are also sold online in packs of multiples. The sausages are fully cooked and shipped frozen with ice packs on Mondays and Tuesdays. They will keep for up to 6 months in the freezer and up to 60 days in the refrigerator, unopened, or four days opened.

A six pack of Cheesy Breakfast Hash and Sweet Potato Sage Chicken Sausages

This combo pack of 36 chicken-based breakfast sausages includes two new flavors: Cheesy Breakfast Hash and Sweet Potato Sage.

“I’m extremely proud of the two breakfast sausages we just launched,” Nicoletti said, noting that “The Cheesy Breakfast Hash is really so good.”

“Seymour, my grandfather and I used to go out to restaurants every Saturday growing up and so [Cheesy Breakfast Hash] is based on our two orders. He always got a Denver omelet and hash browns, so this sausage is made with peppers and onions, shredded potatoes and cheddar cheese.

“The other one is Sweet Potato Sage; it’s like your classic like Jimmy Dean [or] Bob Evans style breakfast sausage. It just tastes like that, but it has sweet potatoes in it, brown sugar and sage and it’s so good.”

Chilli Verde Chicken Sausage Four Pack

“I eat it about three times a week,” Nicoletti said of the Chicken Chili Verde sausage, which is based on Mexican green chorizo ​​and comes in a four-pack for 16 sausages total.

“There are fresh serranos, poblanos and jalapenos. They all have their seeds in them, so it’s really spicy. Cilantro, garlic, lime zest. It’s really delicious with eggs in the morning.”

“I really love beetroot sausage. People are freaked out because it’s hot pink, and it really bothers me because it’s probably…the least intimidating, flavor-wise,” Nicoletti said. “It’s really just a sweet Italian sausage, which looks like your most basic sausage. “It tastes alarmingly like soup,” she said. “I really love it for anything you would use a mirepoix to start a meal with – chicken pot pie, chicken and dumplings, that sort of thing – it adds tons of flavor to those things without too much work.”
